Lake Champlain – Aztec Spicy Hot Chocolate

This is one of six flavors of mix that the Lake Champlain Chocolate folks produce, and as you may expect, this is my favorite. Other flavors include Traditional, Raspberry, Mocha, Old World, Organic and Unsweetened Cocoa. This mix produces a nice creamy chocolate, with a hint of cinnamon and ample bite from the pepper. What you may not expect is that the pepper used is cayenne, and it works pretty well! It’s been our experience that the chipotles are best, and use of anchos helps to provide a smokier base to the heat.

The mix comes in one-pound containers, and instructions recommend 1 heaping tablespoon per 8-ounce portion. Unlike some mass-produced milk-solids based chocolate mixes intended for water, this instructs to use milk. Once mixed, there are minimal chocolate solids left at the bottom of the mug, a good indication that the mix has dissolved appropriately.
