Theo Organic Spicy Chile Dark Chocolate

We’ve had other chocolates from Theo, from their 3400 Phinney line. Nice initial mouthfeel, even with the slightest bit of grittiness at the outset, but it then melts quickly and smoothly. We expected more sweetness, but was pleasantly surprised at the sultry, darker bitterness that came through.
The heat from chili and cayenne starts to build, and gets stronger, and then the cinnamon hidden underneath starts to shine, overcoming the orange oil and zest that initially eclipsed it. Overall, a pretty phenomenal mix of timing and flavors. These guys at 3400 Phinney have their stuff together! We gave this a pretty high heat rating, as it builds to a crescendo after you’ve finished – something we really like.
