Ah, Lindt. Seeing those five letters makes my salivary glands kick in, and vague memories of immature chocolate and red wine pairings from college waft around in my brain.
On the whole, Lindt chocolate bars, especially the plainest ones, are consistently sublime. High cocao content, beautifully blended and meltingly smooth. Never a bitter aftertaste, and always [...]

Redstone’s Red Chili Chipotle dark chocolate bar
April 29th, 2008 · No Comments
Nice dark chocolate (72% cocoa), made by Redstone Foods in Texas. Infused with chipotle chili pepper, this has a methodically increasing heat level as the chocolate washes away out of your mouth. The heat is pretty even and strong, and hits its peak about half a minute after the last bit of chocolate is gone.
This [...]

Frey Chocolate Hot Chili Pepper
March 28th, 2008 · No Comments
Turn up the heat! Finally, a dark chocolate with some teeth. Dry chilies that kick it up a notch. Frey chocolates, a Swiss chocolate company (the only one left?) recently introduced to the American market via Target stores. And all we can say is: thanks, Target!
Here’s a dark chocolate with oomph. The chili creeps in [...]

Frey Chocolate Citron & Poivre (lemon & pepper)
March 28th, 2008 · 3 Comments
Wow - once in a while you try a chocolate that really makes you stop and think about what you’re trying. This is one of them - what a delicious combination of dark swiss chocolate (55%), lemon powder and black pepper. Made by Frey Chocolate, a Swiss chocolatier recently (2006?) introduced their chocolate into the [...]

Mo’s Bacon Bar
March 21st, 2008 · No Comments
Yeah yeah, I know, we have a review of this bar already. It’s just that after focusing several fruity chocolate bars, my thoughts turn to meat. And this is such a great chocolate. What really triggered this? It was the seeds from the freeze dried raspberries of a Chocolove bar that got me hankering for [...]

Chocolove Dark Raspberry
March 21st, 2008 · No Comments
A nice dark semi-sweet bar from the Chocolove folks in Boulder - made with freeze-dried raspberries and 55% dark chocolate. An interesting comparison to their Cherry-Almond bar: the seeds of the raspberries provide the crunchiness amongst one’s teeth after all the chocolate has melted away. With a great belgian chocolate base, this is a another [...]

Chocolove Cherries & Almonds in Dark Chocolate
March 21st, 2008 · No Comments
So I’m not a huge almond lover - not in my top ten favorite nuts - but in this chocolate bar, I think it works wonderfully. You try to break off a piece of this bar, and you can see almonds, but you can’t get to them because the dried cherries are keeping everything together [...]

Dagoba Super Fruit dark chocolate
March 14th, 2008 · 1 Comment
The third chocolate in our Dagoba trilogy this evening is the Super Fruit. Made with acai powder, goji berries and currants - where does these guys in Oregon come up with these ingredients? It’s not like we walk into a Trader Joes and find this in the dried fruit and nuts section… So goji berries [...]

Dagoba Xocolatl dark chocolate, chilis and nibs
March 14th, 2008 · No Comments
So I’m reading this label and wondering what the heck ‘nibs’ are. Are nibs to cocoa beans what giblets are to turkey? Turns out, it’s probably what you expect it to be: roasted cocoa beans, broken into smaller pieces, essentially a purist’s version of chocolate chips.
Back to the chocolate - like the Lemon-Ginger chocolate from [...]

Dagoba Organic Chocolate Lemon Ginger
March 14th, 2008 · No Comments
Found this other organic chocolate line from Oregon - a nice base chocolate, with crystallized ginger and a hint of lemon. The chocolate is well-made, smooth and even-tasting: not too bitter, not too sweet. Ok, so maybe for my taste it’s not too bitter, I admit I like chocolate on the bitter side, to [...]

Endangered Species Dark Chocolate with Blueberries
February 28th, 2008 · No Comments
Picked this up at Target, and it’s intriguing. This is a nice dark (70% cocoa) chocolate ‘infused’ with blueberries. This has a nice fruitiness to it - the blueberries bring a little extra sweetness to it (’jam-iness’) . For those who need a clear conscious when consuming chocolate, these folks pledge 10% of profits back [...]

Ghirardelli 72% dark chocolate
February 28th, 2008 · No Comments
Interesting to compare a more mainstream chocolate to some of these more exotic concoctions we’ve been lucky to try lately.
Creamy smooth, dark lusciousness; this melts nicely in your mouth and has just enough sweetness to let you enjoy the bitterness of the chocolate. It’s a consistently nice solid dark chocolate. You really can’t go wrong [...]

3400 Phinney Fig and Fennel Dark Chocolate
February 28th, 2008 · No Comments
Sweet figs and dark chocolate: yummy. Another interesting contrast in taste and mouthfeel, subtle hints of almonds between fennel and figs in 65% cacao dark chocolate. These guys (Theo Chocolates) in Seattle have an interesting view on chocolate. This 3400 Phinney line is certified organic and fair trade, and must enjoy concocting some of these [...]

3400 Phinney Coconut Curry Milk Chocolate
February 28th, 2008 · No Comments
We’re not sure where we found this, this interesting chocolate from Seattle. Nope, we remember: thanks to Theo Chocolates (see post on Aphrodisiac chocolates). Tumeric, cumin, mustard and curry (”you know, because of the curry…”) embedded into milk chocolate and coconut so intensely, the coconut lingers (in your mouth, in your teeth, against the mini [...]

Lake Champlain - Traditional Hot Chocolate
January 27th, 2008 · No Comments
If you’ve red enough of these entries by now, it’s fair to say I’m a little partial to Lake Champlain chcolates, and here is another good reason: their traditional hot chocolate mix. It’s freakin’ plain and simple good. This is how you imagine you remember the first time your mom made you hot chocolate from [...]
